Wondering what makes the menu at Panchakattu Dosa special? As someone who samples the dosas and idli, it has to be the batter, the freshness, the aromatic dollop of desi ghee and finally the red dip, that looks dangerously spicy but is actually very mild, flavourful with a mouth-watering mild aroma.
Pancha Kattu Dosa is Naga Bharan’s baby. A business development manager with an IT company he quit his job but used his professional knowledge to train himself about the nuances of food business. Along with this, his love for the dosas back home from Tadipatri made him become an entrepreneur.
“One dosa stall in Tadipatri used to make these amazing dosas that are crispy and fluffy. The menu at this nameless stall was very famous and we were regular at the stall. Though due to old age the owner closed the place, I still miss the food. I approached the owner to understand the nuances of the batter and the recipe of the chutney. Tatha, as we called him was more than happy to let us allow to start our business. Since the place had no name and the tatha used to wear a panchakattu (dhoti) I decided to name my dosa van Panchakattu Dosa,” explains Naga Bharan.
PD is a hot favourite with office goers because of their quick service and fresh food stock. A team of men keeps making fresh dosas and idlis to be served. Ghee karam masala dosa is a winner and so is the ghee uttapam . Also it is the karam podi (spice powder) that adds extra kick to the food.
The word karam (spice) shouldn’t discourage you, it does look red but not something one cannot handle.
